A Simple Coffee Cake Recipe

Hmm Coffee Cake

Everyone loves a good cake right? Well how about a good old coffee cake? 😀

Below I list the ingredients and instructions on how to make a simple coffee cake, I have used this recipe for a few years now and absolutely love it so let’s get started!

Ingredients:

Cake:

  • 150g of caster sugar
  • 150g of butter
  • 3 eggs
  • 150g self-rising flour
  • 1 and half teaspoons of baking powder
  • 1 teaspoon of hot water
  • 1 teaspoon or more of instant coffee

Icing:

  • 225g of icing sugar
  • 100g butter
  • 1 and half teaspoons of instant coffee
  • 1 teaspoon of hot water

Cake Instructions:

  1. Preheat oven to 160C, 325F or gas mark 3, Grease 2 tins of the same size, add butter and sugar to a bowl than whisk your heart out until it is fluffy and creamy.
  2. Whisk the eggs and slowly add to the bowl along with a bit of flour but don’t use all the flour just yet.
  3. Add baking powder and the rest of the flour to the bowl and fold it all together gently.
  4. Dissolve the coffee in hot water and add to the bowl, mix well then divide the mixture into the 2 pre-greased tins and cook for 30 minutes. – Keep an eye on it though! One thing I’ve learned from baking cakes is that they can be unpredictable when cooking, sometimes they burn easy, sometimes they need longer, just keep checking until baked all the way through.

Icing Instructions:

While the cake is cooking let’s get started on the icing!

  1. Mix the butter and icing sugar until fluffy and creamy like before.
  2. Dissolve the coffee in hot water like before but make sure not to use too much water or the icing will be runny.
  3. Mix the coffee and fluffy buttery-sugary mix together and leave in the fridge until the cake has finished cooking.
  4. Wait until the cakes are at room temperature then spread the icing on the bottom of 1 cake and put the other cake on top! Any excess icing will go on top of the final cake… Or you can eat it but don’t eat too much on its own, remember it’s mostly butter and sugar!

Caster Sugar? Icing Sugar?!

This is really simple, caster sugar is finer than normal sugar you put in your coffee or tea while icing sugar is finer than caster sugar! You don’t really need to go out and buy them if you have enough normal sugar and a blender you can blend the sugar into finer grains but be careful not to over do it!
